Right now, Mouton is doing classic summery cocktails from around the world with really special twists. Think of it like an overseas summer vacation without leaving Columbus. This Caipirinha is like no other I've seen. The traditional base of cachaca, a sugarcane liqueur, is combined with lime, sugar and a house-made beet shrub (a trendy drinking vinegar). The beet shrub gives the drink a delightfully deep purple hue and an earthy sweetness that just starts to evoke the vegetable. In other words, even if you're not a beet fan, you'll love this drink.
I enjoyed mine with a lovely bread and cheese board. We chose Dan the Baker's roasted sesame and country sour breads alongside some Kokoborrego Tomme cheese, roasted tomatoes and apple butter. And the combination made for a very happy hour indeed.
